Apple Pie Filling

 

 

5 cups Peeled, cored, cut up apples
1 cup Granulated sugar

2 tbs. Minute tapioca

1/2 tsp. Ground cinnamon
1 tsp. Lemon juice, fresh or bottled (optional)

1. Combine apples and sugar in large pot. Stir. Let stand until juice starts to be released. Stir as you bring it to a boil over medium-high heat. Boil hard for 1 minute.


2. Mix in tapioca, cinnamon and lemon juice. Boil hard for 1 minute more. Pack into hot sterilized quart jars to within 1/2 inch (12 mm) of top. Secure lids

3. Process in hot water bath for 20 minutes. Repeat for as many jars as you like. Makes 1 quart, enough for one 9 inch (22 cm) pie.
